Banana Protein Packed Muffins
It is hard to believe that there is NO carbs in the recipe. No flour or oatmeal! Recipe bakes approximate 12 muffins. ENJOY!
3 Very Ripe Bananas
1 ½ Cup of Egg White
3/4 Cup of Whey Vanilla Protein Powder
1/3 Cup Splenda (Baking Kind)
6 TBS PB Fit or Peanut Butter Powder
1 tsp Ground Cinnamon
A Pinch of salt
Preheat the oven to 375 degrees. Grease a 12 muffin pan with cooking spray or paper liners
In a large bowl, mash bananas using a potato masher. Mash very well until there are no large pieces of bananas.
Pour egg whites into bowl with bananas and whisk until well combined.
Add protein powder and whisk the mixture. Add splenda and salt and whisk the mixture. Add PB Fit and cinnamon and whisk the mixture.
Spoon into muffin cups until they are about ¾ of the way full.
Bake for 14 minutes in the preheated oven or until baked. Cool in the pan before removing muffins.
