There are many different versions broccoli salad but this one is my favorite and it is fairly clean! This is an excellent recipe to make sure you are getting a good dose of veggies and it also includes some “good fats”. It is the perfect side with to enjoy with your protein and you can prepare it ahead of time and pack it to eat with you when you are on the go. My family loves this recipe so much that we always double it (which I highly recommend)!
2 Fresh Heads of Broccoli
1/2 cup Chopped Red Onion
6 Slices Cooked Turkey Bacon
½ cup Sliced Almonds (optional)
½ cup Toasted Sesame Seeds (optional)
½ cup Crasins or Raisins (optional)
¾ up light or Fat Free Mayonnaise
1 T Lemon Juice
¼ cup Splenda
2 T White Wine Vinegar (or Red Wine Vinegar if you prefer)
Rinse broccoli under cold water. Chop the stems off the broccoli and cut the heads into bite size pieces. Place chopped broccoli in a large bowl.
1.Cook turkey bacon until it is crisp and you can crumble it. I usually cook it in the microwave for about 6 minutes in between two paper towels. Crumble cooked broccoli into small pieces over in the bowl of broccoli.
Add almonds, sesame seeds and raisins into bowl.
In a separate medium bowl mix mayonnaise, lemon juice, splenda and vinegar together.
Whisk together well and pour over the broccoli and mix all ingredients until all broccoli is coated.
Let chill and ENJOY!!
Note: This recipe tastes better after it has chilled over night.
