Chocolate Coconut Drops
This recipe is courtesy of my very own mother, Mrs. Diane Navin. She has been on an ongoing search to find healthier versions of recipes that her new husband can enjoy together. This is not an easy task as many of you may know if you are cooking for others. My mother's dedication to improving her health and the health of her family is amazing and I hope to live up to half of the person she is! On a side note about the actual recipe... I made these for the first time this weekend and I loved them! The best part was that I did not feel guilty about eating them and they were gone in time for us to start a new week of clean eating!
2 scoops of Chocolate Protein Powder
Two Egg Whites
½ Cup Peanut Butter
½ Cup Quick Oats
½ Cup Shredded Unsweetened Coconuts
1.5 T Coco Powder
3 T Splenda
Preheat Oven to 350 degrees
In a large bowl, mash the banana.
Add in all other ingredients
Line a baking sheet with parchment paper.
Scoop onto the parchment paper (make about 10 cookies) and bake for 15 minutes.
