Swiss and Egg Wrap (AKA Best Breakfast Wrap EVER!)
It is sooo much easier to stick to your nutrition when you experiment and find new ways to prepare your food that taste delicious!! In the world of breakfast wraps this one features a combination of ingredients that were absolutely created to be enjoyed together! It is my favorite, it is our 14-year-old son’s favorite and it is JT’s favorite… and we are all pretty picky about food. The boys don’t particularly like swiss cheese and none of us are huge spinach fans! But again, it is the combinations of the flavors that take these simple ingredients to a stellar breakfast favorite in our house. As always ENJOY and feel free to share!
½ cup egg whites
2 slices of sliced turkey
1 slice of Swiss cheese
½ cup spinach
1 tortilla (like the spinach or sun dried tomato varieties)
¼ cup of your favorite salsa
2 T Olive Oil
1. Rinse spinach in a colander in the sink. Once the spinach is clean, cut off the stems and cut into bite size pieces.
2. Heat 2 T olive oil in a skillet over medium heat. Place the spinach in the hot skillet and use a spatula to toss the spinach until it is coated with olive oil. Using spatula or tongs sauté spinach for 2 minutes until it starts to wilt.
3. Add egg whites and cook until eggs are almost complete using a spatula to fold the egg mixture (do not over mix here)! Add swiss cheese and turkey and cook for one more minute or until cheese melts.
4. Spoon egg bake into tortilla. Fold in the sides of the wrap and serve with your favorite salsa!
