JT and I are super excited to share our vanilla protein parfait recipe! No time for food prep in the morning? No problem! Make this recipe on Sunday night and have breakfast prepared each morning for the next four days! The final product is four parfaits each serving in a separate mason jar making it literally a grab and go meal! This could also be a good substitute for a protein bar or protein shake. I look forward to sharing many variations and let me know if you create one you want to share! Please note you will need four mason jars (or sealable Tupperware / containers). ENJOY!
1 ½ cups old fashioned oats
3 cups of vanilla greek yogurt (watch the brand here / check the sugar content). The lowest sugar vanilla flavored greek yogurt that I have found is Dannon Light & Fit.
1 Cup of Almond Milk (I prefer Blue Diamond Unsweetened)
2 tsp Vanilla Extract
2 Tbl Chia Seeds (find these at Publix with the spices and they are in a bag)
½ tsp Ground Cinnamon
2 scoops of vanilla powder
1. Mix all ingredients into a large bowl.
2. Divide parfait evenly into four mason jars (or sealable containers) and let chill overnight or a minimum of 6 hours. The purpose of letting it chill overnight is for the oats, protein powder and chia seeds to soak up the majority of the almond milk.
3. After chilling you may add almond milk to achieve desired consistency. Enjoy!
