Cauliflower Mash (Mashed Potato Taste-A-Likes)


As my nutrition is getting stricter I continuing to look for ways to cut carbs without feeling deprived… and I am I am SO happy to share this recipe with you!! These mashed potato taste-a-likes have really helped to “trick” my brain into feeling like I am eating carbs; thus reduce my cravings! I hope you enjoy and as always feel free to share.

Ingredients

1 Large Head of Cauliflower

1 T Olive Oil

1 Clove of Garlic (Sautéed)

1/2 Cup Plain Greek Yorgurt

¼ Cup Reduced Fat Parmesan Cheese

1 T Butter Flavored Powder

1/2 tsp Salt (or to taste)

1/8 tsp. Ground Black Pepper (or to taste)

Directions

  1. Wash and cut cauliflower into small florets.

  2. Bring a medium pot to a boil and add cauliflower. Boil for 8 minutes and remove from heat and drain cauliflower in a strainer.

  3. Mince garlic and sauté in 1 T of Olive Oil for 2 minutes. Set aside.

  4. While cauliflower is still hot transfer 1/2 of it to the food processor. Mix until creamy and add additional cauliflower in small batches. Add sauteed garlic and all remaining ingredients and pulse until mashed potato consistency. Add additional amounts of spices to taste achieve desired flavor.
