Mediterranean Hasselback Chicken
4 Boneless Skinless Chicken Breasts
6 Slices of Turkey Bacon
½ Cup Feta Cheese
¼ Cup Olive Oil
2 T Lemon Juice
3 Cloves Garlic (Minced)
1 T Dried Oregano
1/2 T Dried Basil
½ tsp Salt & Pepper
Preheat oven to 350 degrees and line a baking sheet with foil.
Cook turkey bacon (I did this in the microwave until it was almost crispy).
In a small bowl combine olive oil, lemon juice, basil, oregano, minced garlic, salt and pepper and mix well and set aside.
Place Chicken breasts onto a baking sheet. Using a sharp knife cut slits about ½ inch apart across the chicken breast about ¾ of the way down (do not want to cut all the way through!).
Stuff each slit with turkey bacon and feta cheese.
Gently drizzle each chicken breast with the olive oil mixture. Top with additional feta cheese if desired.
Cook 25-30 minutes or until internal temperature is 165 degrees. ENJOY!
