Addictive Blueberry Pecan Cookies


Yields 24 cookies

Please note these are not a significant source of protein and could be substituted for a complex carb because of the oatmeal base to them. Lastly….you have been warned – these cookies are addictive so use portion control or enjoy a few extra on a cheat day!

Ingredients

1 Large Banana (Mashed)

½ Cup Peanut Butter

¼ Cup Sugar Free Maple Syrup

2 T Vanilla Extract

1 Egg + 3 Egg Whites

1 Cup Old Fashioned Oats

¼ Cup Vanilla Whey Protein (or Cinnamon Protein)

½ Cup Coconut Flour

2 T Cinnamon

¼ Cup Splenda Brown Sugar (of Truvia, etc.)

½ tsp Baking Soda

1/8 tsp Salt

Add Ins (Last)

½ Cup Chopped Pecans

¾ Cup – 1 Cup of Blueberries

Directions

  1. Preheat oven to 350 degrees and lightly spray 2 baking sheets and set aside.

  2. Combine all wet ingredients into a medium bowl and mix until well combined. This includes: mashed banana, peanut butter, syrup, vanilla extract, egg and egg whites.

  3. In a large bowl mix all remaining dry ingredients except pecans and blueberries. Mix dry ingredients well.

  4. Spoon 1 cup of wet ingredients into bowl with dry ingredients and mix well. Add another cup of wet ingredients to dry bowl and repeat until wet ingredients are completely mixed in.

  5. Add chopped pecans. If the batter is VERY thick (too difficult to stir) you can add an extra egg white. The dough will be on the thicker side though and that is okay!

  6. Rinse the blueberries and gently fold the blueberries into the batter. Do not over-mix and mash your blueberries!

  7. Form cookies by making a rounded spoonful of batter onto the baking sheets. This recipe yielded about 24 cookies for me. Bake for 15-17 minutes and cool on a cooling rack. Enjoy and refrigerate cookies for maximum for freshness.
