Atlas Meatballs with Red Sauce - Instant Pot
This recipe comes from our good friend, Team Evolve Member and health enthusiast, Susan Petrosino and it is AMAZING! These Spartan meatballs can be made with ground turkey or chicken, pack a flavor punch and are on plan. Use extra sauce for zucchini noodles or over brown rice. The Instant Pot makes it a one pot delight. ENJOY!
Ingredients 1 lb. ground turkey or chicken 1 slice of toasted Ezekiel bread, toasted and ground (use blender to grind) 1 egg yolk 1-2 cloves of grated garlic Salt and Pepper, to taste Hot sauce, if you like zing 2 cups red tomato pasta sauce, check sugar on label 1 cup water or broth
Directions 1) Combine sauce and broth in Instant Pot. Set aside. 2) In large bowl combine well, first 6 ingredients, shape into 1-inch size balls. Place meatballs in pot with sauce. 3) Close the Instant Pot, set pressure valve to seal, and set the pressure to medium. Cook/set for 8 minutes and once timer is done, let meatballs rest in pot for about 5 minutes, then quick release valve.
