After many attempts to create a classic protein pancake this recipe is one of my personal favorites! The recipe yields 3 medium sized pancakes with 40 GRAMS OF PROTEIN! The pancakes have the consistency and appearance so similar to traditional pancakes that most people would not know the difference. Serve with peanut butter on top (optional) and sugar free maple syrup for a sweet protein packed treat that you don’t feel guilty about enjoying!
¼ cup oats
¼ cup cottage cheese
1 rounded scoop vanilla protein powder
½ cup egg whites
1 TBS Splenda
A pinch of salt
Sugar free maple syrup
In a medium bowl combine oats, cottage cheese, protein powder, egg whites, Splenda and salt. Mix until all ingredients combine to make the pancake batter.
Heat a non-stick skillet to medium high. Lightly oil with cooking spray, butter or olive oil.
Pour or scoop batter onto the griddle using approximately ¼ cup for each pancake. Flip pancake and brown on each side. Serve with sugar free maple syrup or any other favorite topping!
