Protein Mug Cake

I wish I could take credit for this - but I can’t.   I have to thank Kelly Barefoot for turning me onto this with her recent FB post with a delicious picture of this tasty treat!  After searching on pinterest I am absolutely amazed I had not had not heard of protein mug cake before?!  There are many different versions and variations and it’s too good not to share!   Here is the basic recipe and you can ad or modify as desired change the flavor of the cake.   

 

In a medium mug combine:  1 scoop protein, 1/2 tsp baking powder, 1 egg, 1 tablespoon sweetener and 1/4 cup almond milk.  Stir until well combined and microwave for 90 seconds and ENJOY!!  Note:  I put peanut butter in the center after it was done cooking per Kelly’s recommendation.
