Turkey Bacon Wrapped Stuffed Chicken

Ingredients

4 Boneless Skinless Chicken Breasts (filet)

Salt & Pepper

Olive Oil

6-8 oz Colby Jack (cubed) or your preferred cheese

Turkey Bacon

 

Directions

  1. Preheat oven to 400 degrees and line a baking sheet with foil and spray lightly with Pam.

  2. Filet boneless skinless chicken breasts in half (half the thickness) and tenderize or pound each piece with a mallet to make them very thin.

  3. Season chicken breasts with olive oil, salt and pepper and set aside.

  4. Cut small blocks of Colby Jack (or any cheese you prefer) to stuff inside the chicken.  Cut enough pieces so you will have one per piece of chicken that you have prepared.

  5. Get ready to Roll!   Lay out the chicken breast and add the block of cheese at very top of the chicken breast.  Roll the breast so the cheese in is the very center, folding in the sides.  Now, wrap the bacon around the outside of the ball of chicken.  The bacon should shrink as it cooks holding the chicken together, but you may also use toothpicks to secure the chicken or to prevent the cheese from spilling out of the side too much while baking.

  6. Bake for 35-40 minutes or until the internal temperature reaches at least 165 degrees and ENJOY!
