These are such a welcomed change our normal turkey burgers! These lean meatballs are FILLED with Italian Flavors from using fresh herbs and they are tender and juicy from being baked!
2lbs of Lean Ground Turkey (we use antibiotic free from Sam’s Club)
¼ Cup Parmesan Cheese (grated or ground)
½ Cup of Ground Oatmeal (use a blender or food processor)
1/3 Cup Chopped Fresh Parsley
2 Tablespoons of Chopped Fresh Oregano
2 Teaspoons Chopped Fresh Rosemary
1 Teaspoon Ground Dry Mustard Powder
3 Tablespoons of Tomato Paste
½ Teaspoon Crushed Red Pepper
3 Garlic Cloves, Minced
1) Preheat oven to 425 degrees. Line a baking sheet with foil and spray lightly with non-stick cooking oil.
2) Combine all ingredients in a bowl and stir well. Form 1½ inch meatballs and bake for 15-20 minutes. Flip meatballs about 10 minutes into baking and continue to bake until the internal temperature reaches at least 165 degrees.
Tip: Check the temperature frequently and do not overcook! Immediately remove the meatballs from the baking sheet after they reach 165 degrees.
